We have listed common terms to give you a greater understanding of bread ingredients:

Bread flour contains more protein and gluten creating dough of greater elasticity and strength resulting in a loaf with superior volume, texture and crust.

Yeast is activated by warm water, acts as a leavening (rising) agent by converting fermentable sugars into bubbles of carbon dioxide gas and contributes to the distinctive flavour of home baked bread.

Sugars in bread dough nurture and accelerate the growth of yeasts.

Salt is essential to help control yeast development and adds flavour.

Bread improvers support the growth of yeasts and the production and retention of gas in the final rising stage (proofing) helping to create a softer texture in the baked loaf.
